22. Mini Kofta Rolls



Kofta is a mixture of minced meat, vegetables, and spices, that are shaped like fingers on a skewer and grilled either over a barbicue or electrically.
This recipe is another of Manal's creations presented on her show. The cooked kofta is then rolled with a sauce of your choice (I used a mixture of yogurt and sesame paste called tahini) and some fresh lettus in the bread of your choice (ideally pitta).




Ingredients:

1 kg beef or lamb boneless thigh pieces
1 green capsicum
1 tomato
1 onion
4 cloves garlic
handful fresh dill weed
handful fresh parsley
1 Tbsp Madras (or any spice mix)
salt and pepper




Method:

Prepare all the vegetables and cut into large cubes.
Put the meat, vegetables, and herbs through a mince machine.
Put the minced mixture in the bowl of a stand mixer, add the spices and seasonings.
Use the paddle fixture to evenly distribute all the ingredients.
Alternatively, knead by hand.
Take a walnut-sized chunk of the mince and shape on a skewer.
At this stage you may either barbicue over an open flame or cook on an electric grill.
To make the sauce, I mixed the yogurt and the tahini, and spread iover a pitta wrap.
Put some fresh shredded lettus and a kofta remove from the skewer.
Wrap the bread into a sandwich roll, and it is ready to eat.
