505. Banana Hotcakes


This recipe is a wonderful twist on the hotcakes recipe I published way, way back.

It is almost as simple as the original recipe, but the addition is morning-altering (I would be a tad bit exaggerating if I were to say life-altering).
Slices of banana are place on the uncooked side of the hotcake. When bubbles appear, signalling time to flip, the hotcake is flipped on the banana covered side to cook and caramelize in a tiny bit of butter.
I think most soft fruit would do, and perhaps some blueberries would be perfect.
Served hot with copious amounts of honey and a mug-full of coffee, it just might make for a memorable morning (or evening, gasp!).


Ingredients:

3/4 cup flour
2 Tbsp sugar
1/2 tsp baking powder
1/2 tsp vanilla
1 large egg
1/3 cup milk
2 bananas, sliced
1 Tbsp butter


Method:

Mix all the ingredients except for the bananas and butter in a bowl with a wooden spoon until just incorporated. Mixture will be lumpy.
Heat a non-stick pan on medium heat.
Pour batter into circles as big or as small as you like.
Arrange as many banana slices as you want on the uncooked surface of the hotcake.
Add a sliver of butter on the banana.
When bubbles will appear on the surface, it is time to turn over.
Leave for a minute or two to cook the flipped side and caramelize the banana..
Remove on a plate, banana-side up.
Serve immediately with a generous drizzle of honey.
