931. Watermelon Raisin Fruit Salad


This is a Moroccan inspired fruit salad combining fresh crisp watermelon with nuts and dried fruit, all laced with a floral sticky syrup and topped with bright green mint.
Simple, it may be, but what a major impact it makes. I like to soak the walnuts beforehand as it gives such a delightful bite. This fruit salad is best served as soon as assembled as the watermelon cubes tend to lose their water thereby their crunch upon standing.


Ingredients:

1/4 cup walnuts
1.5 kg watermelon (seedless)
1/4 cup raisins
2 Tbsp honey
2 Tbsp rosewater
fresh mint leaves


Method:

Soak the walnuts in cold water at least 2 hours or up to overnight in the fridge.
Remove the rind from the watermelon and cube into bite-sized chunks; put in a serving plate.
Drain the walnuts, chop roughly, and scatter over the watermelon.
Scatter the raisins over the lot.
In a cup, stir together the honey and rosewater until combined.
Drizzle over the watermelon. Scatter with some mint leaves and serve immediately.
