999. Laban Roast Chicken


This roast chicken is very minimalistic yet packs quite the flavor punch. The chicken is marinated overnight in the the same dish it will be baked in the next day. Here we have a yogurt drink that goes by many names: ayran, laban, shineena... The nearest thing to it in the West is buttermilk.
Whatever you do, do not use sweetened yogurt drink! This yogurt drink is the plain probiotic one with no added flavors nor sweeteners.


Ingredients:

2 cups laban or buttermilk
2 Tbsp olive oil
10 cloves garlic, grated
1/2 cup chopped parsley or mint
1 tsp salt & pepper
1 chicken, cut into 8 parts


Method:

In the same deep baking dish you will bake your chicken in, lay the chicken pieces skin-side up in a single layer. In a pitcher, whisk together the laban (buttermilk), olive oil, grated garlic, chopped herbs, salt and pepper. Pour over the chicken, cover in plastic, and refrigerate overnight.
Next day, preheat oven to 400F. Take chicken out of the refrigerator and allow to reach room temperature. Bake uncovered in the preheated oven for 90 minutes.
Serve with a side of carb of choice and a salad.
